
As part of my recent change in diet, I’ve been making a lot of homemade goodies. One thing that I have been particularly proud of is homemade almond butter. I intended to go to the grocery store and just pick up a jar of almond butter, but after reading the label and seeing that sugar is added to every single one, I decided to go the homemade route.
I used this recipe and whipped up a batch last weekend. I used my food processor the first time, which is what is suggested, but the consistency was not very smooth. However, since then we’ve gotten a Magic Bullet (which I highly suggest investing in), and with my second batch, the consistency came out a lot smoother.
My breakfast lately has consisted of a banana covered in this delightful butter and cut up into bite size pieces. On mornings when I prefer something warm, I throw my banana into the microwave until it turns into mush, then mix a heaping spoonful of almond butter in with it. It’s heaven in a bowl I swear. It’s also good on apples and mixed in with smoothies for an extra protein boost.
It’s safe to say I’m hooked.
