Today I thought I’d share one of my favorite simple soup recipes. My mom used to make this when I still lived at home and since I’ve moved out, I’ve been making it on my own.
What you need:
- 1 64 oz bottle of low sodium V-8 juice
- 1 can of diced tomatoes
- 1 can of corn
- 1 can of black beans
- 2 packs of taco seasoning
- 1lb of turkey (or beef, whatever you prefer)
In a large pot, add the turkey meat and one pack of taco seasoning. Cook the turkey until it is brown, then add in the V-8 juice, tomatoes, corn, black beans and the other pack of taco seasoning. Stir the mixture and let simmer. Once the mixture is thoroughly heated, eat and enjoy.
I like to top this soup with corn chips and cheese. For a vegetarian alteration, leave out the turkey and double the beans if you prefer. If you’d like to add a little kick to your soup, mix in a can of Rotel.
The best thing about this soup is that it’s a one pot meal. It’s quick and easy and very tasty.













Oh wow this sounds really wonderful! I will have to make some for dinner one of these days. Warm super is the best during the chilly evenings up here on the mountain I live on.
It’s so easy and it makes enough for seconds or left overs. I just love soups and chili when the weather starts getting colder.
